We investigated the effects of Gluten Friendly™ bread on mucus production in the intestinal epithelium, and of barrier function in healthy human mucus-secreting goblet cells. Mucus production in cells evidenced a significant increase in MUC2 concentrations in cell monolayers exposed to digested Gluten Friendly™ bread. Additionally, we observed significantly higher values for gut barrier function in cell monolayers exposed to digested Gluten Friendly™ bread.
